A creamy sauce that’s an excellent accompaniment to white fish.

You will need a Sharp Knife, Chopping Board, 2 Saucepans and a Baking Tray. Preheat your oven to 180°C and bring a saucepan of water to the boil.

Ingredients
1 Red Onion, or 2 Shallots
1 Vanilla Pod
Glass of White Wine
2 Cups Double Cream
Cod Fillet
Knob of Salted Butter

PREP
Finely chop the onion. Slice the vanilla pod in half and set the seeds aside.

BEGIN THE SAUCE
Sweat the onions with the vanilla pod until onions are soft. Add the white wine. Simmer until reduced before adding the double cream.

COOK THE COD
Poach the cod fillet for 5-6 minutes before finishing the cooking in the oven.
Tip: The cod will be cooked when it appears opaque in colour and easily flakes apart.

FINISH OFF
Add the vanilla seeds to the sauce with the knob of butter. Pour over your cooked cod fillet.
