Is there anything greater than the warm hug from a bowl of vanilla custard? This recipe is really quick and much tastier than shop bought custard.

Make sure you’ve got a Sharp Knife, Chopping Board, Saucepan, Whisk, Mixing Bowl and a Mixing Spoon.

Ingredients
1-2 Vanilla Pods
570ml Whole Milk and Double Cream (half and half)
4 Eggs
2 tbsp Caster Sugar

PREP
Split the vanilla pods lengthways. Separate the egg yolks – you won’t need the egg whites for this recipe.
Tip: Why not use up the egg whites in an omelette, or whip up some fluffy meringues.

BEGIN THE CUSTARD
Add the vanilla pods, milk and cream to a saucepan. Warm through until almost at boiling point. Whisk the egg yolks with the sugar in a mixing bowl.

MAKING THE CUSTARD
Remove the vanilla pods, then briskly whisk the warm milk and cream in with the egg yolk and sugar.
Tip: Continuous whisking prevents the eggs from cooking too quickly and becoming scrambled.

Pour the mixture back into the saucepan. Stir over a low heat until thickened. This will take about 5 minutes.
Tip: Your custard will be ready when it coats the back of a spoon.

Serve your custard immediately.

Enjoy on its own, with fruit, or over your favourite warm pudding.
